Easy Salmon Recipe: Salmon Patties
Before I share this easy salmon recipe, here’s a confession: my husband thinks the patties I make aren’t as good as his mom’s. Ouch, that hurt a lot! Still, I must say this easy salmon recipe isn’t all that bad. The kids love the patties and even the husband thinks they come pretty close to the easy salmon recipe for patties that his mom swears by.
Okay, enough comparison of easy salmon recipes! Let’s get cookin’!
Ingredients:
2 tablespoons minced onion
1 tablespoon minced fresh parsley
1 large egg
salt, pepper, dry dillweed to taste
some fresh squeezed lemon juice
enough fresh bread crumbs to bind (try Japanese honey flavored Panko breadcrumbs)
oil to sauté ( peanut oil is nice )
Steps:
1. Combine everything and add enough breadcrumbs to bind mixture.
2. Form into patties. These may be made ahead of time and chilled.
chilling is recommended so patties hold together better
3. Fry the patties in hot oil until golden on both sides. Turn them carefully.
4. Serve with tarter sauce or mango mayo.
A word of note on this easy salmon recipe: the flavor changes radically when you change the herbs and spices that you use. For example, if you add cilantro and ginger, you won’t end up with the same-tasting salmon patties you did when you didn’t use both.
